Mom's chopped bean soup

Ingredients for 6 servings:

  • 2 large onions
  • 2 liters of water
  • 800 g potatoes
  • 2 jars of beans (chopped beans) 660 g each
  • 500 g minced meat
  • 1 roll
  • 1 egg(s)
  • salt and pepper

Instructions

Working time approx. 30 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 15 minutes

Peel the potatoes and cut into bite-sized pieces. Peel and roughly chop the onions. In a large pot, fry the onions in a little fat until translucent. Fill with 2 liters of water, bring to a boil, pour in the water from the jars of chopped beans (approx. 550 ml), but don’t add the chopped beans yet! Then add the potato pieces and cook for 30 minutes. In the meantime, prepare the minced meat. Soak the bread roll in warm water, squeeze out any excess water, and tear it into small pieces. Then, in a bowl, mix the minced meat with the bread roll and egg and season with salt and pepper. Knead well with your hands and then form small, round mini meatballs. Collect them on a board for the soup. After 30 minutes of cooking, reduce the heat to low. The soup should not be boiling any more. Add the chopped beans to the soup, stir everything well, and season with salt and pepper. Not too much, as the minced meat is also seasoned. Finally, add the meatballs to the soup. Important: Do not stir, as otherwise the meatballs will break apart. Let stand for about 15 minutes. Then stir gently again and serve.
