Ingredients for 4 servings:
- 1 kg green beans
- 6 m.-sized potatoes
- 2 liters of beef broth
- 4 Mettwurst sausages
- 250 g bacon, cut into strips
- 1 onion(s)
- 500 g minced beef
- 1 roll, from the day before
- 1 egg(s)
- 1 apple, sour
- 2 tbsp parsley, finely chopped
- savory
- Salt and pepper, white
- Sugar
- Vinegar

Working time approx. 45 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 25 minutes
According to my grandmother’s recipe
Trim the beans and cut into approximately 2 cm long pieces. Peel and dice the potatoes and apple. Cook the beans and apple in the salted beef broth with plenty of savory, adding the potatoes after 10 minutes. In the meantime, slice the Mettwurst, finely dice the onion, and fry both in a pan with the bacon strips. Mix the ground beef with the egg and the soaked bread roll to form a dough, season with salt and pepper, roll the dumplings, and cook in the soup over low heat for the last 10 minutes. Let the Mettwurst, bacon, and onion simmer in the soup for 5 minutes. Season to taste with salt, pepper, possibly 1/2 teaspoon of sugar, and 1 to 2 teaspoons of vinegar. Finally, add the finely chopped parsley to the bean soup while it is still boiling.
