Monkfish cheeks alla Saltimbocca

Ingredients for 2 servings:

  • 2 monkfish cheeks
  • 4 slices of bacon
  • 10 sage leaves
  • n. B. Clarified butter

Instructions

Working time approx. 15 minutes; Rest time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Heat the clarified butter in a pan. Fry four sage leaves in a little lard and remove. Place two leaves on each cheek, one on top and one on the bottom. Wrap the cheeks crosswise with bacon and fry in the lard. Let the parcels rest for a while and serve with the remaining sage leaves.
