Monkfish on garlic spinach

Ingredients for 2 servings:

  • 1 onion(s)
  • 1 garlic clove(s)
  • 1 slice(s) bacon
  • 4 tbsp flour
  • 6 tbsp olive oil
  • 4 monkfish fillets (80 g each), ready to cook, without skin
  • salt and pepper
  • 2 tbsp butter
  • 200 g spinach (baby spinach)
  • ½ lemon(s), the juice

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Peel and finely chop the onion and garlic. Finely chop the bacon. Place the flour on a shallow plate. Heat 3 tablespoons of olive oil in a non-stick pan. Season the fish with salt and pepper and coat in flour. Shake off any excess flour. Fry over medium heat for 2 minutes on each side. After 2 minutes, add the bacon and butter. Heat the remaining 3 tablespoons of oil in a saucepan. Sauté the garlic and onion. Add the spinach and let it wilt. Season with salt, pepper, and lemon juice. Place the spinach and monkfish fillets on plates and drizzle with the bacon and butter.
