Mother's Day Heart Cake

Ingredients for 1 servings:

  • 3 eggs, separated
  • 150 g sugar
  • 150 g flour
  • 5 tbsp water, warm
  • 1 tbsp baking powder
  • 3 bananas
  • 2 tbsp jam (strawberry jam)
  • 250 ml orange juice
  • 1 pack of cake glaze
  • possibly cream stiffener
  • 3 cups of cream
  • Chocolate decoration or sugar decoration

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Beat the egg whites and sugar until stiff, then whisk the egg yolks and water until creamy and carefully add to the egg whites. Mix the flour and baking powder and sift over the mixture. Stir, but do not use a mixer. Place the sponge cake on a heart-shaped baking tray lined with baking paper in an oven preheated to 200°C and bake for about 12-15 minutes. Let the sponge cake cool and then cut it in half horizontally (if that’s too risky for you, separate the sponge cake and bake two sponge cakes instead). Spread the strawberry jam on one sponge cake half and place the bananas on top. Make a glaze with the orange juice, let it cool and pour it over the bananas. Then whip the cream, using cream stiffener if desired, until stiff and spread about 2/3 over the bananas. Place the second sponge cake half on top of the cream and spread with the rest of the cream, including the edges. Decorate as desired or for the occasion, then refrigerate for about 3 hours before serving.
