Muesli – Special – Muffins

Ingredients for 1 servings:

  • 100 g muesli (wholemeal fruit muesli)
  • 125 ml milk, low-fat
  • 25 g dark chocolate
  • 100 g flour
  • 2 tsp cocoa powder, fat-free, unsweetened
  • ½ tsp baking soda
  • 1 tsp baking powder
  • 1 egg(s)
  • 50 g sugar
  • 50 ml vegetable oil
  • 125 ml eggnog
  • Rum flavor

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

WW – suitable, enough for approx. 12 pieces

Mix the muesli with the milk and let it sit for a while, preferably a few hours. Break the dark chocolate into small pieces. Mix the flour with the cocoa powder, baking powder, and baking soda. Beat the egg, sugar, oil, egg liqueur, and rum flavoring with a hand mixer until frothy. First, add the flour mixture, then the muesli mixture and the chocolate chips on low speed. Place paper baking cups in the wells of a muffin tin. Divide the batter evenly among the paper baking cups. Bake for approximately 20 to 25 minutes in a preheated oven at 180°C. For WW bakers: approximately 3.5 cups per muffin.
