Muffin – Chocolate – Banana

Batter
- 4 size Eggs (L)
- 4 heaped tablespoons Erythritol (or xylitol)
- 100 g Quark
- 1 pack Baking powder
- 100 g Almond flour
- 50 g Lowcarb coconut flakes
- 3 level tablespoons Cocoa fiber
- 40 g Dark, grated chocolate (90% cocoa content)
- 50 g Melted butter (but it shouldn’t be hot anymore !!!)
- 2 size Soft, diced bananas
- • Preheat the oven to 170 ° C fan-assisted air • Mix all the ingredients in the specified order to form a batter • Fill the dough into 12 muffin tins • and bake for 25 – 30 minutes
