Muffins with chocolate and rum – raisins

Ingredients for 1 servings:

  • 150 g raisins
  • 2 tbsp brown rum
  • 250 g flour
  • 3 tbsp, crushed cocoa powder, unsweetened
  • 1 tbsp, leveled baking powder
  • 1 pinch of salt
  • 1 pinch of nutmeg, freshly grated
  • 150 g sugar
  • 150 g dark chocolate (70% cocoa), coarsely chopped
  • 1 large egg(s)
  • 150 ml milk
  • 6 tbsp oil

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Soak the raisins in the rum overnight. Preheat oven to 190°C. Grease a muffin tin or line it with paper baking cups. Stir together the flour, sugar, baking powder, cocoa powder, salt, nutmeg, and chocolate in a bowl. Mix the egg, milk, oil, and rum-infused raisins well and add to the dry ingredients. Quickly stir in and divide among 10 or 12 muffin tins. Bake on the middle rack for about 20 minutes.
