Muffins with Chocolate Raisins
The perfect muffins with chocolate raisins recipe with a picture and simple step-by-step instructions.
- 250 g Yogurt 3.5%
- 2 piece Eggs size M
- 125 g Sugar
- 1 packet Vanilla sugar
- 75 ml Sunflower oil
- 250 g Flour
- 2 tsp Baking soda
- 150 g Chocolate Raisins
- Put the yogurt in a bowl. Add the eggs, sugar and vanilla sugar and stir everything with a whisk until smooth. Finally add the sunflower oil and stir in well.
- Mix the baking soda with the flour in a separate bowl and sieve into the yoghurt mixture, tablespoon at a time. Stir in briefly. When the batter is smooth, fold in the chocolate raisins.
- Pour the batter into a prepared muffin tray (either grease the wells well or line them with paper liners). Bake in a preheated oven (top / bottom heat) at 175 degrees for about 20-25 minutes.
- Let the finished muffins cool down on a wire rack and enjoy! Oh yes, I have deliberately avoided glazing or dusting with powdered sugar because the muffins are quite sweet thanks to the chocolate raisins.
- Makes 12 muffins.
