Muffins with Goat Cheese and Lamb’s Lettuce

The perfect muffins with goat cheese and lamb’s lettuce recipe with a picture and simple step-by-step instructions.

muffins

  • 300 g Puff pastry slices
  • 150 g Goat cream cheese
  • 150 g Goat feta
  • 1 tablespoon Acacia honey
  • 1 tablespoon Extra virgin olive oil
  • 1 teaspoon Fresh thyme
  • 6 Blackberries fresh
  • 2 teaspoon Sweet paprika powder
  • 1 teaspoon Espelette pepper

Lamb’s lettuce per person

  • 2 Handful Lamb’S lettuce fresh
  • 1 Baby peppers
  • 2 Cherry tomatoes red
  • 3 Blackberries fresh
  • Some onion rings
  • 1 tablespoon Extra virgin olive oil
  • 1 teaspoon Balsamic vinegar with fig
  • Orange pepper salt

  1. Preheat the oven to 200 degrees.
  2. Mix the goat cream cheese with the goat feta.
  3. Add the remaining ingredients and mix well.
  4. 9 Fill the muffin cases with the puff pastry. Set aside some puff pastry.
  5. Fill the muffin cases with the cheese and cover with strips of puff pastry.
  6. Bake in the oven for about 25 minutes. My oven is old. The baking time should be shorter with newer ovens.

Lamb’s lettuce

  1. Arrange the lamb’s lettuce on a plate and add the blackberries, tomatoes and onions. Season with olive oil balsamic vinegar and orange pepper salt from my KB or another salt.
