Ingredients for 1 servings:

  • 1 liter of Greek wine (Retsina)
  • 10 bay leaves
  • 10 peppercorns, crushed
  • 250 g honey
  • Thyme and rosemary or
  • Anise and coriander

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Spiced wine in ancient Rome

Pour the wine into a pot. Add the honey and spices and heat gently. Don’t let it get too hot, or the alcohol will evaporate. Spoon off any foam that forms. Then return it to the bottle with the spices. You can let it steep for a few days or drink it immediately. When pouring, strain it through a sieve and dilute it with about half the volume of water.
