Ingredients for 4 servings:

  • 500 g mushrooms
  • 1 onion(s)
  • 2 tbsp butter
  • 2 cloves garlic
  • Salt
  • pepper
  • olive oil

Instructions

Clean the mushrooms and cut into small pieces. Finely dice the onion and sauté in the butter until soft. Add the finely chopped garlic to the onion. Add the mushrooms, cover, and sauté for 10 minutes. Season with salt and pepper. Purée the entire mixture in a blender. Add enough olive oil until the paste becomes nice and creamy. The paste can be spread on spaghetti like pesto. If desired, add a dash of cream to help it spread evenly. Mushrooms that have been sitting for a while are also ideal, as they have dried out slightly and are no longer suitable for other purposes. The paste will keep in the refrigerator for 1 or 2 days, but it can also be frozen.
