Ingredients for 4 servings:

  • 500 m.-large mushrooms, fresh white
  • 1 lemon(s), juice
  • 1 bunch parsley, flat, very finely chopped
  • 2 garlic cloves, finely diced or crushed with salt
  • 125 ml olive oil, best
  • 2 shallots, finely diced or crushed with salt

Instructions

Working time approx. 15 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 15 minutes

Clean the mushrooms (no water!) and slice them very thinly. Mix the lemon juice, salt, ground pepper, shallots, garlic, and olive oil to make a vinaigrette. Place the mushrooms in a bowl with the very finely chopped parsley and toss with the other ingredients. Serve with toast, baguette, or ciabatta.
