Ingredients for 4 servings:
- 500 g mushrooms
- 3 garlic cloves
- 1 bunch of parsley
- olive oil
- Salt and pepper, white
- Balsamic vinegar, milder

Ideal for a cold buffet or as a side dish to grilled meat
Clean the mushrooms and divide any larger heads. Heat the olive oil in a pan. Sauté the mushrooms and 2 whole garlic cloves thoroughly, stirring constantly. When the mushrooms have taken on a nice color, season with salt and pepper. Immediately deglaze with a generous splash of balsamic vinegar and add the washed and finely chopped parsley. Stir everything again. If the mushrooms are too dry, add a little more olive oil, season to taste, and transfer everything to a bowl rubbed with a garlic clove. Let it marinate in the refrigerator for at least 4 hours, but do not serve cold.
