Ingredients for 4 servings:

  • 10 g porcini mushrooms, dried
  • 200 ml water, hot
  • 300 g mushrooms (e.g. button mushrooms, chanterelles, oyster mushrooms), fresh, of your choice
  • 500 ml vegetable stock
  • 150 ml cream
  • salt and pepper
  • Chives, cut into rolls
  • some butter

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

quick and easy

Soak the porcini mushrooms in 200 ml of hot water. Clean and roughly dice the fresh mushrooms. Sauté the diced mushrooms in butter, season with salt and pepper. Deglaze with vegetable stock. Add the porcini mushrooms and the soaking water and simmer for about 10 minutes. Purée the soup with a hand blender until smooth. Then add the cream and bring back to a boil. Season to taste and garnish with chives.
