Gratinated figs

Ingredients for 2 servings:

  • 100 g quark
  • 1 egg yolk
  • 25 g butter, melted
  • 2 tsp vanilla sugar
  • 1 tbsp sugar
  • 1 tsp cornstarch
  • ½ orange(s), untreated, zest
  • 1 egg white
  • 1 pinch of salt
  • 1 tbsp sugar
  • 4 figs

Working time approx. 20 minutes; Total time approx. 20 minutes

Figs baked in quark cream

Cream together the quark, egg yolks, melted butter, 1 tbsp sugar, cornstarch, and orange zest. Beat the egg whites with a pinch of salt until stiff, then stir in 1 tbsp sugar. Stir for another 1-2 minutes. Carefully fold the stiffly beaten egg whites into the quark. Wash and quarter the figs, and arrange them in a small baking dish. Spread the quark cream over the figs using a teaspoon. Bake on a cold baking sheet in a preheated oven at 220°C on the middle rack for 10-15 minutes (no fan!). Serve as soon as the gratin is nicely browned.
