Mushroom toast Ortenau style

Ingredients for 2 servings:

  • 100 g mushrooms, fresh
  • 1 tbsp butter
  • 2 tbsp flour
  • 2 tbsp dry white wine
  • 4 tbsp whipped cream
  • salt and pepper
  • garlic powder
  • 1 egg yolk
  • 50 g ham (Black Forest)
  • 2 slices of cheese, thin, e.g. Gouda
  • 2 slices of toast
  • some parsley, for garnishing

Working time approx. 25 minutes; Total time approx. 25 minutes

Preheat the grill or oven. Brown the toast. Melt the butter and add the flour, toast until light golden, and pour in the white wine. Bring to a boil and then add the cream to the thick sauce. Season with salt, pepper, and garlic seasoning, and thicken with the egg yolk. Cut the ham into strips and mix with the mushrooms and the sauce. Spread on the toast and top each with a slice of cheese. Bake in the oven for about 10 to 15 minutes, until the cheese turns golden brown. Garnish with some fresh parsley.
