Ingredients for 4 servings:
- 600 g mushrooms, medium size
- 250 ml dry white wine
- 1 large tomato(s) or 2 smaller ones
- ½ bunch parsley, chopped
- 1 large onion(s)
- 100 ml olive oil
- 10 coriander seeds
- 1 lemon(s), juice
- 1 bay leaf
- Sea salt
- Pepper, freshly ground
- some thyme

A delicious starter
Clean the mushrooms, trimming the stem ends if necessary. Place them in a bowl and season well with lemon juice, pepper, and sea salt. Season to taste. Add the white wine, a little thyme, the bay leaf, the coriander seeds, and the parsley. Blanch the tomatoes and peel them, then deseed and dice them as finely as possible. Add them to the mushrooms. Mix everything well and let it simmer for about 30 minutes. Peel and finely dice the onion. Heat the oil in a pot or deep frying pan until very hot and sauté the diced onions until golden brown. Now add the mushroom mixture and the remaining ingredients. Cover the pot and simmer everything over medium heat for about 5 minutes. Season again and serve.
