Mushrooms with Fire Beans

The perfect mushrooms with fire beans recipe with a picture and simple step-by-step instructions.

  • 500 g Forest mushrooms
  • 250 g Fire beans, thin green pods
  • 3 Pc. Fresh onion the size of a medium
  • 2 Pc. Garlic cloves chopped
  • 6 Branches Fresh thyme
  • 1 tablespoon Clarified butter
  • 1 tablespoon Balsamic vinegar red
  • Salt pepper to season,
  • Chopped parsley
  1. Clean the mushrooms and cut into 1/2 cm slices.
  2. Wash the beans and remove any strings if necessary, then cut into bite-sized pieces and pre-cook for about 10 minutes.
  3. Cut the onions into thin wedges and fry them in clarified butter until translucent. Then add 2 tablespoons of olive oil, mix the beans with the onions and continue cooking. After a further 10 minutes, mix in the mushrooms and add the thyme and garlic and simmer again in the pan for about 8 to 10 minutes.
  4. Then season with salt and pepper, mix in the parsley and serve hot (in the pan).
  5. Goes well with Kritharaki, a Greek type of pasta. But it also tastes very good with rice.
