Mussels topped with Parmesan

Ingredients for 2 servings:

  • 1 ½ kg mussels
  • 120 ml olive oil
  • 3 cloves garlic
  • salt and pepper
  • 1 piece(s) Parmesan, 20 – 40 g, to taste

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

With garlic

Clean the mussels under running water with a small brush and remove the beards on the edges. Discard any open mussels, as they may be spoiled. Then pour the mussels into boiling water and cook for about 5 minutes. Strain the cooking water. Open the opened mussels and place only one half with the mussel meat in a baking dish. Discard any closed mussels. Peel the garlic cloves and press them through a garlic press. Mix with oil, salt, and pepper. Drizzle the garlic-oil mixture over the mussel halves in the baking dish. Sprinkle with grated Parmesan cheese. Bake for about 8 minutes in an oven preheated to 200°C.
