  • 2 eggs, size L
  • 1 packet of vanilla pudding powder for cooking, already sweetened (e.g. from Natreen)
  • 1 pinch(s) salt
  • Fat for the mold

Separate the eggs, then whisk the two egg yolks with the quark and pudding mix to form a smooth batter. Beat the egg whites with a pinch of salt until stiff peaks form. Carefully fold this into the batter. Pour the batter into a greased or lined 20cm springform pan. Bake in a hot oven at 150°C (top/bottom heat) for about one hour. After one hour, do the skewer test. If there is still batter on the skewer, leave it in the oven for another 5 to 10 minutes. Tip: If you like, you can vary this cake endlessly with frozen fruit, fresh fruit, or – as in the photo – with a few chocolate shavings. Your imagination is the limit. The pudding mix is ​​already sweetened, so no additional sweetening is necessary. This cake made from this basic recipe only has about 600 calories.
