Ingredients for 1 servings:
- 500 g low-fat curd cheese
- 2 eggs, size L
- 1 packet of vanilla pudding powder for cooking, already sweetened (e.g. from Natreen)
- 1 pinch(s) salt
- Fat for the mold

Separate the eggs, then whisk the two egg yolks with the quark and pudding mix to form a smooth batter. Beat the egg whites with a pinch of salt until stiff peaks form. Carefully fold this into the batter. Pour the batter into a greased or lined 20cm springform pan. Bake in a hot oven at 150°C (top/bottom heat) for about one hour. After one hour, do the skewer test. If there is still batter on the skewer, leave it in the oven for another 5 to 10 minutes. Tip: If you like, you can vary this cake endlessly with frozen fruit, fresh fruit, or – as in the photo – with a few chocolate shavings. Your imagination is the limit. The pudding mix is already sweetened, so no additional sweetening is necessary. This cake made from this basic recipe only has about 600 calories.
