Ingredients for 1 servings:
- 250 g flour
- 130 g margarine
- 60 g sugar
- 1 egg(s)
- 1 packet of vanilla sugar
- 1 tsp baking powder
- 1 tsp cinnamon, optional
- 150 g butter
- 150 g sugar
- 150 g almond flakes
- 5 tbsp milk
- 1 slice(s) rusk, finely grated
- 3 large apples, soft, floury
- Fat for the mold

Apple cake with roasted almonds, easy to prepare
For the base, knead all the ingredients into a dough. If you like, add a teaspoon of cinnamon. Press the shortcrust pastry into a greased springform pan and spread the grated rusks on top, lightly covering the base. Peel the apples and cut them into small cubes. Press them lightly onto the base. The apples should reach the edge of the pastry. If not, add more apples. For the almond mixture, first heat the butter in a pan. Add the sugar and let it melt for about 3 minutes, stirring constantly. Then add the flaked almonds and toast for about 3 minutes, stirring constantly. As soon as the almonds start to take on some color, add the milk. Sprinkle the almonds on top of the apples, spread them evenly and press them down firmly. Then bake the cake at 175°C (fan oven) for about 30 minutes. As soon as the almonds are nicely browned and crispy, the cake is ready. Note: The almond mixture varies depending on the size of the springform pan. For smaller molds, use about 100g each of butter, sugar and almonds, otherwise the mixture will be too thick and difficult to cut.
