My sausage salad

Ingredients for 2 servings:

  • 350 g meat sausage (Lyoner)
  • 1 red bell pepper(s)
  • 3 spring onions
  • 3 shallots
  • 10 gherkins
  • e.g. cheese (Emmental)
  • 1 tsp mustard, sweet
  • 8 tbsp white wine vinegar
  • 6 tbsp oil (sunflower oil)
  • 4 tbsp water
  • Salt and pepper from the mill
  • some sugar
  • some sweet paprika powder
  • some chives
  • some parsley
  • 2 eggs, hard-boiled

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cut the sausage into very thin slices. Wash and trim the bell peppers, then cut into strips. Wash and trim the spring onions, then cut into thin rings. Cut the shallots into thin rings, the gherkins into small pieces, and the Emmental cheese (as desired) into sticks. Mix the sausage, vegetables, and cheese. Mix a dressing of mustard, vinegar, oil, water, salt, sugar, and pepper and pour over the sausage and vegetable mixture. Mix well. Season with paprika. Mix in the finely chopped herbs. Quarter the eggs and add them. Let them marinate in the refrigerator for 1-2 hours. Serve with fresh bread or pretzels.
