Ingredients for 1 servings:

  • 22 biscuits (wholemeal biscuits, e.g. 1 pack from Leibnitz)
  • ½ tsp cinnamon powder
  • 45 g butter, melted
  • 750 g cream cheese
  • 175 g sugar
  • ½ tsp vanilla flavor
  • 3 eggs
  • 1 lemon(s), zest
  • Butter, for the mold
  • e.g. fruit, etc. for decorating

Instructions

Working time approx. 35 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 35 minutes

Preheat the oven to 180°C (top/bottom heat). Crumble the wholemeal biscuits, mix with the cinnamon powder and butter (the SMELL!). Spread the biscuit mixture evenly on the greased base of the springform pan and press it 4 cm high onto the edge of the pan. Bake in the oven for 5 minutes, then let it cool in the pan. Do not turn the oven off! Put the cream cheese and sugar in a bowl and beat with a mixer until smooth. Add the lemon zest and vanilla extract and beat in the eggs one at a time until golden brown. Pour the filling onto the cooled base in the pan and bake in the oven for 60 minutes, until the cake has risen. Turn off the oven and let the cake stand with the door closed for another 1 hour, then remove it from the oven, let it cool, and decorate as desired.
