Noodle and Coconut Soup with Swiss Chard

- 250 ml Vegetable broth
- 250 ml Coconut milk
- 100 g Cooked penne
- 75 g Swiss chard
- 1 tsp Lemon juice
- 1 tsp Soy sauce
- 1 tsp Dried coriander
- 1 tsp Salt
- Wash and chop the chard. In a large saucepan, bring the coconut milk with the vegetable stock to the boil. Add the chard pieces and simmer for about 5 minutes. Then puree. Now add the already cooked noodles and let the soup simmer again for about 5 minutes. Season to taste with the lemon juice, soy sauce, a little coriander and a little salt. Then serve.
