Noodle and Coconut Soup with Swiss Chard

The perfect noodle and coconut soup with swiss chard recipe with a picture and simple step-by-step instructions.

  • 250 ml Vegetable broth
  • 250 ml Coconut milk
  • 100 g Cooked penne
  • 75 g Swiss chard
  • 1 tsp Lemon juice
  • 1 tsp Soy sauce
  • 1 tsp Dried coriander
  • 1 tsp Salt
  1. Wash and chop the chard. In a large saucepan, bring the coconut milk with the vegetable stock to the boil. Add the chard pieces and simmer for about 5 minutes. Then puree. Now add the already cooked noodles and let the soup simmer again for about 5 minutes. Season to taste with the lemon juice, soy sauce, a little coriander and a little salt. Then serve.
