Swiss Chard and Potato Soup
The perfect swiss chard and potato soup recipe with a picture and simple step-by-step instructions.
- 700 g Potatoes
- 800 g Swiss chard
- 1 Onion
- 1 Clove of garlic
- 500 ml Mild vegetable broth
- 500 g Unsweetened soy yogurt
- 0,5 Tl Turmeric
- 0,125 Tl Cayenne pepper
- Chop the chard stalks and leaves separately Finely chop the onion and garlic. Dice the potatoes.
- Steam the onion and garlic in a little oil for 5 minutes. Add the chard stalks and cook for another 3 minutes.
- Pour in the stock, add the turmeric and add the potatoes. Simmer for about 8 minutes. Add the chard greens to the soup and simmer for another 2 minutes.
- Add yoghurt to the soup and heat briefly, do not boil any more! Season to taste with cayenne pepper.
