Noodle soup with beef

Ingredients for 4 servings:

  • 1 beef leg slice(s)
  • 2 liters of water
  • 1 tbsp, leveled vegetable broth, instant
  • 1 bag of frozen vegetables (Kaisergemüse, approx. 750 g)
  • salt and pepper
  • some nutmeg, if necessary
  • 250 g soup noodles
  • ½ bunch parsley, chopped

Working time approx. 15 minutes; Cooking/baking time approx. 1 hour 45 minutes; Total time approx. 2 hours

Bring the beef shank to a boil in the water with the vegetable stock, pepper, and salt. Cover and simmer on low heat for approximately 1 to 1.5 hours. Remove the shank and cut the meat into small cubes (approx. 1 x 1 cm). Meanwhile, simmer the vegetables in the soup on low heat for 15 minutes. Then add the noodles to the stock and cook according to the instructions. If you prefer, you can also cook the noodles in salted water in another pot and then add it to the stock. Return the meat and season with salt again if desired. Finally, add the chopped parsley.
