Noodles with vegetables à la Didi

Ingredients for 1 servings:

  • 150 g pasta from the previous day
  • 100 g sauerkraut (pineapple sauerkraut) from the previous day
  • ½ bell pepper(s), red
  • 3 spring onions
  • 1 carrot(s)
  • 1 rosemary sprig(s)
  • 1 handful of pine nuts
  • 1 tbsp vegetable oil
  • e.g. salt and pepper

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 20 minutes

Pasta con verdure, using leftovers

Wash the bell peppers and cut into small pieces. Wash the spring onions and slice them into rings. Thinly slice the carrots. Roast the pine nuts. Heat the oil in a pan and sauté the vegetables with the rosemary. Add the sauerkraut and pasta and sauté briefly. Season with salt and pepper. Arrange on a plate, sprinkle with the pine nuts, and serve.
