Ingredients for 1 servings:
- 250 g bran (oat)
- 50 g bran (wheat)
- 20 g psyllium husks
- 5 tbsp flaxseed
- 1 packet of baking powder
- 4 eggs
- 500 g low-fat curd cheese
- 1 tbsp, leveled salt
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 10 minutes
Mix all ingredients thoroughly and pour into a greased loaf pan. I first beat the eggs with salt using a hand mixer, then add the quark. Then add the dry ingredients and mix with a hand mixer. Bake at 180°C for about 60 minutes, until golden brown. This bread won’t rise as high as yeast bread and will have a firmer consistency, similar to that of whole-wheat bread. It will keep for a few days in the refrigerator and toasts well. Variations include sunflower seeds, pumpkin seeds, pine nuts, chopped walnuts, bread spice, curry, caraway seeds, bacon, and onions.
