Oatmeal Apple Cookies

Ingredients for 1 servings:

  • 90 g apple rings (dried)
  • 125 ml water (hot)
  • 125 g butter (soft)
  • 95 g brown sugar
  • 1 large egg(s)
  • 75 g oat flakes ( wholegrain )
  • 25 g desiccated coconut
  • 125 g flour
  • 1 tbsp sugar
  • ¼ tsp cinnamon

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Preheat the oven to 180°C and line two baking sheets with parchment paper. Cut the apple rings into small pieces, place them in a small bowl, and pour over the hot water. Let stand for a few minutes until the water is absorbed. Cream the softened butter with the sugar, add the egg, and stir until well combined. Using a wooden spoon, stir in the oats, coconut flakes, flour, and apples. Now take a level tablespoon of batter and place it in piles on the prepared baking sheet. Make sure they are not too close together. In a small bowl, mix 1 tablespoon of sugar with 1/4 – 1/2 teaspoon of cinnamon and sprinkle the cookies with it. Bake them in the preheated oven for about 20 minutes, or until lightly browned. Remove them from the oven and let them cool on a wire rack. Depending on the size, this batter yields about 15-20 cookies; they taste best fresh. Instead of dried apple rings you can also use dried apricots.
