Oatmeal cookies

Ingredients for 1 servings:

  • 200 g brown sugar
  • 230 g butter, melted
  • 200 g flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • ½ tsp salt
  • 2 large eggs
  • 320 g oat flakes
  • 150 g raisins,
  • possibly chocolate

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Oatmeal Cookie, makes about 36 pieces

Preheat the oven to 180°C (350°F). Mix the oats, flour, baking soda, cinnamon, salt, and raisins. In a larger bowl, mix the sugar with the melted butter using a hand mixer or a wooden spoon. Add the eggs and vanilla extract and mix in. I always whisk the eggs first, as I only use a wooden spoon, which makes it easier to incorporate the eggs. Now add the ingredients from the other bowl and mix in. Line a baking sheet with baking paper and place two tablespoonfuls on the sheet, making sure to leave 5-6 cm between each cookie, as the cookies will expand. Place in the oven and bake for about 9-11 minutes until lightly browned. Remove from the oven and immediately place on a wire rack to cool. You can also add finely chopped dark chocolate, if desired.
