Oatmeal cookies with raisins

Ingredients for 1 servings:

  • 400 g flour
  • 1 packet of baking powder
  • ½ tsp salt
  • 1 tsp cinnamon powder
  • 150 g oat flakes, wholegrain
  • 100 g raisins
  • 170 g butter
  • 150 g brown sugar, preferably fine
  • 100 g powdered sugar
  • 1 whole egg
  • 1 egg yolk

Instructions

Working time approx. 15 minutes; Rest time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Oatmeal & Raisin Cookies à la Ben’s Cookies

Preheat oven to 200°C (top/bottom heat) (180°C fan/convection oven). In a mixing bowl, combine flour, baking powder, salt, oats, and raisins. Melt butter until completely liquid. Using a mixer on medium speed, stir brown sugar and powdered sugar into the butter. Let the butter mixture cool to body temperature (test by dipping your finger into the mixture). Add egg and egg yolk to the cooled butter mixture and mix until smooth. Now add the butter mixture to the flour bowl and mix everything into a smooth dough. Form approximately 16 cookies, each weighing 70g, and bake on a baking sheet lined with baking paper for 8-10 minutes. 1 cookie has approximately 230 kcal.
