Ingredients for 1 servings:

  • 230 g butter
  • 200 g sugar, brown, unrefined
  • 50 g cane sugar or white sugar
  • 1 tsp vanilla extract
  • 2 eggs
  • 180 g flour
  • 1 tsp baking soda
  • 250 g oat flakes
  • 160 g raisins
  • 2 tsp cinnamon powder
  • 1 pinch of salt
  • 1 tsp molasses

Instructions

Working time approx. 20 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 10 minutes; Total time approx. 2 hours 30 minutes

American oatmeal raisin cookies, soft & chewy

Beat the butter and sugar for at least 3 minutes until fluffy. Add the eggs and beat for another 2 minutes. Then add the vanilla and molasses to the mixture and mix well. In another bowl, combine the flour, baking soda, and spices, and gradually stir into the egg mixture. Once well blended, fold in the oats and raisins. Let the dough rest in a cool place for at least 60 minutes, preferably 120 minutes. Then, using your hands or a spoon, form small balls and place them on a baking sheet lined with parchment paper. Bake in the preheated oven at 180°C (350°F) for 10 minutes. No longer, or the cookies will be crispy rather than chewy. The insides will still look very raw. Remove from the oven, let rest on the hot baking sheet for 5 minutes, and then transfer to a wire rack to cool.
