Oatmeal Raisin Cookies

Ingredients
 

  • 100 g Margarine
  • 1 pinch Salt
  • 80 g Brown sugar
  • 1 packet Vanilla sugar
  • 2 tbsp Maple syrup or liquid honey
  • 2 Eggs
  • 100 g Wholemeal spelt flour
  • 1 tsp Baking powder
  • 80 g Oatmeal
  • 90 g Raisins

Instructions
 

  • Mix the margarine, salt, sugar, vanilla sugar, maple syrup and eggs with a hand mixer until frothy until the sugar has dissolved. Mix the flour and baking powder and stir in briefly with the oat flakes. Just until all the ingredients are moist. Finally fold in the raisins.
  • On a baking sheet lined with baking paper, use a spoon to put small piles next to each other with a little space between them and flatten them a little. Bake in the preheated oven on the middle rack at 180 degrees (or fan oven 160 degrees) for about 12 minutes, until the cookies are golden brown. Keep an eye on the cookies from the 10th minute onwards, the baking time varies between 10-15 minutes depending on the oven.
  • Take out and let the cookies cool down a little on the baking sheet, then transfer to a wire rack to cool down completely.
