English butter biscuits with chocolate, for one baking tray, 28 pieces

Recommended flavorings include ginger, orange peel, lime peel, cinnamon, coriander powder, or vanilla. The butter should be soft and creamy; take it out of the refrigerator at least 3 hours in advance. Cream the butter, sugar, and any flavorings in a bowl until fluffy. Add the flour and cornstarch, knead, and chill for 1 hour. Preheat the oven to 180°C (350°F). Spread the dough evenly on a baking sheet lined with baking paper. Use a ruler to mark the biscuits’ dimensions (8 x 14 cm). Lightly press 2 chocolate chips per biscuit, smooth side up, into the batter. Bake for approx. 12-14 minutes on the middle rack. The dough will initially bulge slightly due to the evaporating moisture. Once the dough has collapsed back into itself and has a smooth surface, bake for another 1-2 minutes. Cut the biscuits with a sharp knife while they are still hot and let them cool. Only when the cookies are cold do they have enough firmness to be separated and packaged.
