One Pot Pasta Coconut Milk Curry

Ingredients for 2 servings:

  • 230 g linguine
  • 2 bell peppers, red and orange
  • 1 bunch of spring onions
  • 1 carrot(s)
  • 1 garlic clove(s)
  • 1 tbsp curry powder
  • ½ tsp salt
  • 400 ml coconut milk
  • 350 ml vegetable stock
  • n. B. Nuts
  • e.g. fresh basil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Combine all ingredients (including the raw pasta!) except the nuts and basil in a pot and bring to a boil. Then reduce the heat and simmer with the lid almost completely closed for 10-15 minutes. Stir occasionally to prevent burning. Garnish the pasta with the chopped nuts and basil and serve.
