Ingredients for 4 servings:
- 500 g broccoli
- 1 bell pepper(s)
- 1 garlic clove(s)
- 1 tbsp oil
- 2 tsp curry powder
- 1 jar bamboo strips
- 400 ml coconut milk, unsweetened
- 2 tbsp peanut butter
- 500 ml water or vegetable stock
- n. B. Pfeffer
- n. B. Salt
- 250 g mie noodles
- n. B. Fried onions for sprinkling
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes
Cut the broccoli into small florets and the bell pepper into strips. Peel and dice the garlic. Heat a little oil in a pan and sauté the garlic, bell pepper, and broccoli. Add 2 teaspoons of curry powder and sauté briefly. Next, add the bamboo shoots, coconut milk, peanut butter, 500 ml water (or vegetable stock), pepper, and salt to the pan. Bring everything to a boil. Finally, add the noodles, remove the pan from the heat, and let stand for about 5 minutes. Sprinkle with fried onions, if desired.
