Onion chutney

Ingredients for 4 servings:

  • 1 kg onion(s), red
  • 2 tbsp olive oil
  • 200 g sugar, brown
  • 100 ml red wine
  • 150 ml balsamic vinegar
  • 1 bay leaf
  • salt and pepper

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

a lovely “gift from the kitchen”

Peel the onions and slice them into thin strips. Pour the olive oil into a large pot and sauté the onions. Add the sugar, wine, vinegar, and bay leaf. Simmer over low heat until creamy. Season with salt and pepper. While still hot, pour the onion mixture into jars, screw on the lids, and turn upside down for about 5 minutes. Keep refrigerated for about 4 weeks. Tastes great with poultry such as goose, duck, turkey, or pork. Or simply spread on crostini with Camembert.
