Onion salad with pumpkin seed oil

Ingredients for 4 servings:

  • 300 g onion(s), red
  • 300 g onion(s), white
  • 300 g grapes, white and blue
  • 1 bunch of thyme
  • 40 g walnuts
  • 3 tbsp pumpkin seed oil, good quality
  • 2 tbsp apple cider vinegar, mild
  • 1 tbsp sugar
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Slice the onions into thin rings, halve the grapes and remove the seeds. Rinse the thyme. Roughly chop the walnuts and mix with vinegar, salt, pepper, sugar, and oil to make a vinaigrette. Mix the onions and grapes with the thyme and marinate in the vinaigrette for a few minutes. Serve with hearty farmhouse bread.
