Quick potato and tomato casserole

Ingredients for 4 servings:

  • 4 tomatoes
  • 4 potatoes
  • 250 g ham, finely chopped
  • 150 g low-fat cream cheese (herbs)
  • 250 g cheese, Da Capo, low-fat
  • salt and pepper
  • Caraway seeds
  • Herbs, Italian

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Boil potatoes in their skins, peel, and slice. Slice tomatoes. Place potato slices on a plate, sprinkle with salt and caraway seeds (if you don’t like caraway seeds, you can omit them). Spread with cream cheese and sprinkle with ham cubes. Place tomatoes on top, and season with Italian herbs and pepper. Finally, place a thin slice of Da Capo cheese on each tomato and potato. Microwave each plate for about 6-8 minutes. You’ve got a quick office lunch ready, which also goes great with zucchini. If you don’t like the microwave, you can also prepare the dish traditionally in a casserole dish – it should then be in the oven at 180°C for about 20 minutes.
