Orange and almond cake

Ingredients for 4 servings:

  • 2 orange(s), organic
  • 6 eggs
  • 200 g sugar
  • 250 g almonds
  • 2 tsp baking powder
  • 1 pinch of cardamom

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 20 minutes

Wash the oranges and boil for 2 hours (you may need to add more water once). Let them cool, halve them, and remove any pips. Blend them finely. Beat the eggs with the sugar in a bowl until frothy. Stir in the almonds, baking powder, and orange puree. Pour the batter into a greased 20 cm springform pan and bake for about 60 minutes at 170 degrees Celsius (preheated oven!!!). Let them cool and sprinkle with powdered sugar, if desired. The cake will be about 5 cm thick. If you bake two, you can use them with ganache in between for a themed cake. The flavor is very juicy and fresh, but also has a hint of bitterness from the orange peel. Note: If the organic oranges are small, I use three, but don’t use all the peel from the third. Tip: Grind the almonds yourself, as they have much more flavor.
