Ingredients for 4 servings:

  • 6 corn cobs
  • 500 ml water
  • 40 g butter, in cubes
  • 200 g feta cheese, crumbled
  • 2 pinches of salt
  • pepper, black

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Soul food – made from fresh corn

Remove the husks and fibers from the corn cobs, then cut off the kernels. You will need approximately 500g of corn kernels. Bring the corn to a boil with 500ml of water and simmer for approximately 12 minutes, then remove with a slotted spoon. Reserve the cooking water. Grind the corn in a blender, adding a little more cooking water if necessary. Return the corn paste to the cooking water and cook for 10-15 minutes, stirring continuously, until it reaches the consistency of mashed potatoes. Add the butter, salt, feta, and pepper and heat for approximately another 2 minutes. Serve with eggplant and tomato sauce or simple ratatouille.
