Ingredients for 2 servings:
- 350 g pork loin(s)
- 6 slice(s) bacon, streaky, thin
- Mustard
- black pepper, freshly ground
- 1 cup of cream
- some butter
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
For the medallions, cut the pork loin into six equal pieces. Brush the bacon slices with a little mustard, season with pepper, and wrap the bacon around the medallions, lean side down. Place in a buttered casserole dish, place a knob of butter on each medallion, and bake in a preheated oven at 200°C for 20-25 minutes. Just before serving, pour the cream over the medallions and return them to the oven briefly to warm through. This dish goes well with curry rice and a crisp green salad. This dish can be prepared well in advance and is perfect for large gatherings.
