Ris à la Malta – Apple pudding. A rice pudding recipe from Sweden, a traditional Swedish Christmas dessert
First, bring the water and salt to a boil, add the rice pudding, and cook for about 5 minutes, stirring constantly. Now add the milk, bring to a boil briefly, then reduce the heat and cook for about 40 minutes, stirring occasionally. Just before the rice pudding is tender, season with sugar, cinnamon, and orange juice. Remove from the heat and let cool. The rice pudding also works wonderfully in a Thermomix or Monsieur Cuisine. Once the rice pudding has cooled, whip the cream, gradually adding the vanilla sugar. Carefully fold the cream and the orange or mandarin orange pieces into the rice pudding. Ris à la Malta is a typical Swedish dessert, usually served on Christmas Day. Sometimes a whole almond is hidden in the rice. Whoever finds this will have extra luck in the New Year!
