Orange – Vanilla – Fruit Jelly

Ingredients for 1 servings:

  • 250 ml apple juice, naturally cloudy,
  • 500 ml orange juice, freshly squeezed
  • 2 orange(s), filleted, in pieces
  • 1 cl orange liqueur
  • 1 large grapefruit(s), the juice
  • 1 lemon(s), the juice
  • 1 vanilla pod(s)
  • 1 stalk(s) cinnamon
  • 600 g gelling sugar, 2:1

Instructions

Working time approx. 20 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 15 minutes; Total time approx. 2 hours 35 minutes

Pour the apple juice and freshly squeezed orange juice into a tall 4-liter saucepan. Peel and segment 2 oranges, then slice into small pieces. Pour orange liqueur over the slices and marinate for about 1 hour. Halve and squeeze the grapefruit and lemon. Pour the reserved juice into the pan and stir in the gelling sugar. Score the vanilla pod with a knife and add it to the juice mixture along with the cinnamon stick. Let it rest for 1 hour. Now add the marinated orange slices to the juice, mix well, and bring to a boil, stirring constantly. Continue boiling the jelly for about 12-15 minutes. After testing for settling, pour into screw-top jam jars that have been rinsed with hot water and seal immediately. Place the jars upside down on a damp kitchen towel and turn them over again after 5 minutes. To ensure the fruit pieces are evenly distributed, turn the jars several times while cooling. This amount makes about 8 smaller glasses!
