light, sparkling aperitif from France, served well chilled, a wonderful start to a barbecue evening

Place the sugar, wine, and schnapps in a container and stir in the sugar with a wooden spoon, then close the container. Shake the liquid gently from time to time; after 24 hours, the sugar should be dissolved. The next day, wash and dry the oranges and lemons thoroughly. Halve the citrus fruits and then slice the halves. Place the slices, cinnamon stick, and vanilla pod in a large container. Close the container and let everything steep in a cool, dark place for 8 weeks. Shake the container gently once a week. Filter the infusion (if necessary, strain it through a cloth) and bottle. Then let the orange wine stand for a further 15 days. Serve the drink chilled as an aperitif or digestif. Shelf life: 12 months. Orange wine has 4531 kcal.
