Ingredients for 1 servings:
- 300 ml water, lukewarm
- 200 g wholemeal emmer flour
- 200 g rye flour type 997
- 100 g wheat flour type 550
- 150 g walnuts, chopped
- 50 g oat bran
- 25 g flaxseed, crushed
- 20 g iodized salt with fluoride and folic acid
- 20 ml apple cider vinegar
- 7 g baking malt
- 7 g dry yeast
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 1 hour 45 minutes
I use organic ingredients for this bread. Mix the flours and make a well. Add the yeast, lukewarm water, and 2-3g of sugar. Let it stand for about 20 minutes, until foam forms (a sign that the yeast is working). Then add the remaining ingredients and knead either manually for about 5 minutes or with a food processor on the lowest setting for about 2 minutes. Line a baking pan with baking paper (very important) and pour in the dough. Place the pan in a cold oven and bake for 60-90 minutes at 190-210°C (top and bottom heat), depending on the oven. I also place a baking dish filled with water in the oven.
