Oriental noodle salad

Ingredients for 5 servings:

  • 300 g turkey meat, shredded
  • 1 tsp cornstarch
  • 2 tbsp soy sauce
  • 1 tbsp olive oil
  • 1 tsp curry powder, good quality
  • 1 tsp cumin
  • 1 lemon(s), juice (reserve a few dashes for the dressing)
  • 1 medium-sized onion(s), quartered, finely sliced
  • 3 tbsp olive oil
  • 1 tsp, heaped harissa
  • 2 tbsp vinegar (white wine vinegar)
  • some lemon juice, a few dashes of
  • 1 medium-sized onion(s), quartered, finely sliced
  • 1 large tomato(s), with inside, quartered, then sliced
  • salt and pepper
  • 1 pinch(s) of sugar
  • 500 g pasta of your choice (farfalle, spaghetti, sedanini, etc.)
  • 2 bell peppers, skinned, quartered, cut into fine strips
  • ½ cucumber(s), pitted, quartered, thinly sliced

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

Mix the shredded meat with the cornstarch and let it marinate for about 1 hour together with the marinade ingredients. In the meantime, prepare the dressing for the salad dressing using the listed ingredients and let it marinate. Cook the pasta al dente according to the package instructions. Drain and toss with the dressing and the finely chopped vegetables. Fry the marinated meat over high heat, stirring constantly, and arrange on top of the salad. Note: Without the marinated meat, the salad is also an ideal side dish for grilling. You could also thread the meat onto skewers or place the marinated meat whole on the grill and serve it separately with the salad.
