Oriental zucchini and minced meat pan

Ingredients for 4 servings:

  • 1 onion(s)
  • 1 garlic clove(s)
  • 4 m.-large zucchini
  • 2 tbsp oil
  • salt and pepper
  • 400 g minced meat, mixed
  • 1 tbsp curry powder
  • 1 tsp cumin
  • 100 g whipped cream
  • 2 tbsp almonds
  • 2 tbsp raisins

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel and finely dice the onion and garlic. Wash and thinly slice the zucchini. Heat 1 tablespoon of oil in a pan and fry the zucchini vigorously. Season with salt and pepper, then remove from the pan. Heat the remaining oil in the frying fat and fry the minced meat until crumbly. Add the onion and garlic and fry briefly. Add the curry powder and cumin and sauté. Pour in the cream, simmer briefly, and season to taste. Roughly chop the almonds, wash and drain the raisins. Add both to the minced meat along with the zucchini and simmer for another 3-4 minutes. Season to taste. Serve with rice or flatbread and mint yogurt.
