Ingredients
 

dough

  • 500 g Spelt flour type 630
  • 250 ml Water
  • 20 g Yeast (fresh)
  • 20 g Salt
  • 3 tbsp Extra virgin olive oil

sauce

  • 500 g Strained tomatoes
  • 2 piece Tomatoes, fresh
  • 1 piece Onion
  • 1 piece Clove of garlic
  • 1 piece Salt
  • 1 tsp Sugar
  • Oregano
  • Basil
  • Thyme
  • Sage
  • Extra virgin olive oil

Covering

  • 5 Discs Cooked ham
  • 5 Discs Salami
  • 200 g Mozzarella, grated until firm

Instructions
 

  • Sift the flour into a bowl, make a well in the middle and pour in the water and olive oil. Crumble in the yeast and let it dissolve briefly. Knead the dough well by hand (or a mixer) for about 10 minutes until it is smooth and pliable.
  • Cover and let the dough rise in a warm place for about 20 minutes until it has doubled its volume.
  • Prepare the sauce during the break. Chop the onion and clove of garlic and fry them in a saucepan with the olive oil. Add the sugar to caramelize (can be omitted if necessary). Add the tomatoes and let simmer for about 15 minutes. Then add the chopped tomatoes and the spices and season to taste.
  • Roll out the dough thinly on a baking sheet lined with baking paper, spread the sauce on top and evenly distribute the chopped salami and the cooked ham on top. Finally sprinkle the mozzarella cheese on top.
  • Bake the pizza in a preheated oven (180 ° C) for about 15-20 minutes until the cheese is golden brown.
